Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1 1/2 cups heavy cream
1/4 cup whole milk
Eight 4-inch cinnamon sticks, crushed
2 teaspoons cardamom pods
1 teaspoon whole cloves
1 teaspoon black peppercorns
1/2 teaspoon ground ginger
1/2 teaspoon freshly grated nutmeg
1/2 pound bittersweet chocolate, coarsely chopped

Instructions

In a small saucepan, combine the heavy cream with the milk and all of the spices and bring to a boil. Remove from the heat and let steep for 20 minutes.
Strain the cream into a bowl and wipe out the saucepan. Return the cream to the saucepan and bring to a boil. Put the chocolate in the bowl and pour the hot cream over it. Let stand for 3 minutes, then whisk until smooth. Transfer the fondue to a bowl and serve.
