Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

3 pounds sweet potatoes, cubed
1 teaspoon salt
1 1/2 cups softened butter
6 large eggs
1/2 cup self-rising flour
3 cups sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg

Instructions

Preheat the oven to 350 degrees F.
Bring a large pot of water to a boil over high heat. Add 1 teaspoon of salt and the potatoes. Cook the potatoes until tender, then drain and cool to room temperature. Add the potatoes and the remaining ingredients to a blender and puree.
Pour into a greased 9 by 13-inch casserole pan and bake in the oven for 1 hour or until set and lightly browned. Remove from the oven and serve hot.
