Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

2 eggs
1/4 cup milk
1 tablespoon white sugar
1 1/2 teaspoons vanilla extract
1 teaspoon ground cinnamon
2 cups corn flakes cereal, crushed
4 slices bread, toasted

Instructions

Preheat oven to 375 degrees F (190 degrees C).
Beat eggs, milk, sugar, vanilla extract, and cinnamon in a bowl; dip toast into egg mixture and press into crushed corn flakes until coated. Arrange coated toast in a single layer in a baking dish.
Bake in the preheated oven until lightly browned and crispy, 6 to 8 minutes per side.
