Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Walnuts are low on the glycemic index. What’s more, they also lower the glycemic index of other foods that you eat in conjunction with these nuts. Any kind of nuts provide a healthy source of fat and a great way to encourage PCOS weight loss.

Ingredients

1 c. Silvana's Kitchen Gluten-Free All-Purpose Flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/4 tsp. salt
1 c. light brown sugar
1/4 c. sour cream
4 tbsp. unsalted butter
1 large egg
2 tsp. pure vanilla extract
2 medium carrots
1/2 c. walnuts
1 c. heavy cream
2 tbsp. confectioners' sugar
1/4 c. whipped cream cheese
warm maple syrup

Instructions

Preheat oven to 200 degrees F and set a rack in a rimmed baking sheet. In a medium bowl, whisk flour with baking powder, baking soda, cinnamon, and salt.
In a large bowl, whisk brown sugar with sour cream, butter, egg, and 1 teaspoon of vanilla. Using a wooden spoon, stir in dry ingredients, then stir in carrots and walnuts.
Preheat a waffle iron and brush with butter. Scoop 1/3 cup of batter into center of iron, spreading batter with the back of a spoon. Close iron and cook until waffle is deeply golden and crispy, about 5 minutes. Transfer waffle to rack in oven. Repeat with remaining batter.
Meanwhile, in a medium bowl, using a handheld electric mixer, beat heavy cream at medium speed until soft peaks form. Reduce speed to low and beat in confectioners' sugar, cream cheese, and remaining 1 teaspoon of vanilla until firm peaks form.
