1 pound Yukon gold potatoes (about 3 medium)
2 tablespoons extra-virgin olive oil
4 ounces Canadian bacon, cut into thin strips
4 whole scallions, coarsely chopped, 2 tablespoons reserved for garnish
2 cloves garlic, finely chopped
1 red or green bell pepper, chopped (1 1/4 cups)
1 to 2 teaspoons hot sauce, plus extra for serving
One 15-ounce can low-sodium kidney beans, rinsed and drained
Kosher salt and freshly ground black pepper
4 large eggs
