Lunch: Zucchini Parmesan Chips

Recipe by Lindsay Funston If you love Parmesan raise your hand and then go make these amazingly simple, totally addictive two-ingredient chips.

Ingredients

2 lb. zucchini, thinly sliced
1 1/2 c. freshly grated Parmesan
Coarse salt

Instructions

Preheat oven to 425 degrees F and line two baking sheets with parchment paper. Arrange zucchini slices on baking sheets and top each with a generous amount of Parmesan. Season with salt.
Bake until deeply golden and crisp, about 20 to 25 minutes.
Serve hot.
