Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

8 oz neufchatel cheese
15 oz pumpkin
6 packets sweetener
1 tbsp vanilla
1 tsp cinnamon

Instructions

1. Using room temperature neufchatel or cream cheese combine with pumpkin.

2. Add vanilla, sweetener (like Splenda), seasoning and beat until smooth with a mixer.

3. Refrigerate for at least 30 minutes to set.

4. Serve cold with a tablespoon of fat free cool whip (optional).
