Lunch: Mimosa Granita

Recipe by Deb Wise Try a perfect poolside, wine-spiked Granita to elevate your next weekend brunch. It's sure to hit the spot on the hottest summer days. Just think of this as your grown-up snow cone. For non-drinkers, use white grape juice.

Ingredients

1 cup water
1/2 cup coconut sugar
Dash of salt
1 1/2 cups fresh orange juice
1 cup sweet white wine (such as prosecco or riesling)

Instructions

Stir together water, sugar and salt in a large bowl, whisking until sugar dissolves. Whisk in orange juice and wine. Pour mixture into an 8-inch square metal dish; freeze for 1 hour. Stir with a fork, scraping to break up into flakes. Repeat process every hour until completely frozen, about 4 hours. Scrape mixture with a fork until fluffy.
