Lunch: Lobster Salad with Mango and Red Onion
Ingredients
3 tablespoons fresh lime juice
2 tablespoons rice wine vinegar
1 tablespoon sugar
1 garlic clove, minced
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon coarsely ground black pepper
4 cooked lobster tails, sliced into medallions or chopped
1 cup diced mango
1/2 cup finely chopped jicama
1/4 red onion, very thinly sliced
1/2 jalapeño pepper, very thinly sliced
1/2 cup lightly packed fresh cilantro leaves
4 cups mixed salad greens
Instructions
Combine first 7 ingredients in a jar; cover with a lid, and shake to combine.
Combine lobster and next 5 ingredients; toss with dressing. Divide salad greens among 4 plates; top evenly with lobster mixture.
