Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1/4 cup low fat cottage cheese
3 large eggs
1/2 tsp cinnamon
2 tbsps soy flour
1/2 tsp cream of tartar
1 serving 1 packet splenda

Instructions

1. Pre-heat oven to 300 °F (150 °C).

2. Oil a small loaf pan with vegetable oil, butter or pan spray.

3. Beat the egg whites with an electric mixer until frothy. Add the cream of tartar and beat until stiff peaks form, but the whites are still moist.

4. Combine the egg yolks, cottage cheese, soy flour, and sweetener and fold into the egg whites. Add cinnamon. Do not over mix.

5. Pour the mixture into the prepared pan and bake in the preheated oven for about 40 to 45 minutes, or until the loaf is lightly browned and springs back when touched with a finger.
