Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. Ingredients
2/3 cup packed brown sugar
1/4 cup apple cider
2 cups regular oats
2/3 cup chopped pistachios
2/3 cup nutlike cereal nuggets (such as Grape-Nuts)
2/3 cup dried sweet cherries
1/2 cup sunflower seed kernels
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Instructions
Combine sugar and cider in a large nonstick skillet; cook over medium-high heat 3 minutes or until sugar dissolves, stirring frequently. Stir in oats and remaining ingredients; cook 5 minutes or until granola is lightly browned, stirring frequently. Cool completely. Store in an airtight container up to a week.
