Dinner: Red Curry Tofu

Tofu and veggies in coconut red curry sauce.

Cook Time: 20 mins

Total Time: 30 mins

Ingredients

14 1/2 oz lite coconut milk
1 tbsp light brown sugar
2 tbsps red curry paste
24 oz stir fry teriyaki vegetables
12 oz black soybean tofu

Instructions

1. Warm coconut milk, curry paste and sugar. Simmer 5 minutes

2. Rinse vegetables and drain well.

3. Add vegetables to sauce and simmer until warmed through.

4. Drain and cube the tofu.

5. Add tofu to the pan, cover and heat through stirring gently to coat with sauce.
