Lunch: Avocado, Orange, and Red Onion Salad

Recipe by Frank P. Melodia Creamy avocado offsets sweet oranges and piquant red onion in this colorful side salad. Serve alongside our Easy Chicken Mole.

Ingredients

1 large ripe Hass avocado
3 navel oranges
1 small red onion
1/4 c. Cilantro leaves
Juice of 1 lime
1 tbsp. extra-virgin olive oil
1/4 tsp. kosher salt
1/4 tsp. Freshly ground pepper

Instructions

Arrange avocado, orange, and onion slices on a serving plate; scatter cilantro on top. Drizzle with lime juice and olive oil, then season with salt and pepper.
