Lunch: Caramelized Onion Tart with Goat Cheese and Thyme

Recipe by Anna Watson Carl This super fancy tart is also super easy. Serve it warm or at room temperature.

Ingredients

1 (14-oz.) sheet frozen puff pastry, thawed
1/4 c. Country Crock Original
2 large onions, thinly sliced into half moons
2 tbsp. brown sugar
kosher salt
Freshly ground black pepper
8 oz. goat cheese, crumbled
10 fresh thyme sprigs

Instructions

Preheat the oven to 400 degrees F and line a baking sheet with parchment paper. On a floured surface, roll out puff pastry to a 9-by-13" rectangle. Transfer puff pastry to prepared baking sheet and prick all over with a fork.
Bake until golden brown, 15 minutes. Let cool slightly.
Meanwhile, in a large pot, warm Country Crock Original over medium-high heat. Add onions and cook until golden, 10 minutes. Add brown sugar and cook 5 minutes more. Season with salt and pepper.
Spread caramelized onions over puff pastry, leaving a 1/2" board around the edges. Sprinkle with goat cheese and scatter thyme sprigs on top.
Bake until puff pastry is golden brown and crisp and cheese is warm and melty, about 10 minutes. Let cool slightly, then cut into squares and serve.
