Ingredients

1 1/2 cups all-purpose flour
1/2 cup whole-wheat flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
2 cups buttermilk
2 eggs
8 tablespoons (1 stick) butter, divided, plus more for cooking pancakes
1/4 cup honey, plus 1 tablespoon, divided
1 lime, zest finely grated

Instructions

Whisk 4 tablespoons butter, 1/4 cup honey, and lime zest in a bowl until smooth, or pulse to combine them in a mini food processor. Refrigerate until ready to serve with the pancakes.
