Lunch: Radiatore with No-Cook Puttanesca Sauce

Health and fertility benefits of Radiatore with No-Cook Puttanesca Sauce

Basil is an excellent stress reliever, and has antioxidant and anti-inflammatory benefits.

Ingredients

1 1/2 lb. ripe tomatoes
1 clove garlic
1/3 c. Fresh basil
1/2 c. imported black olives
2 tsp. capers
3 anchovies
1/4 tsp. crushed hot red pepper flakes
3 tbsp. extra-virgin olive oil
1/4 tsp. salt
3/4 lb. radiatore pasta
Basil leaves for garnish

Instructions

In a large bowl, combine tomatoes, garlic, basil, olives, capers, anchovies, hot pepper flakes to taste, oil, and salt. Stir until blended. Let sit for 15 minutes.
Cook pasta in a large pot of salted boiling water until al dente, 10 to 12 minutes. Drain. Shake colander a few times. While pasta is hot add to sauce and toss. Garnish with basil. Serve immediately.
