Lunch: Garden Pea Salad
A nice vegetarian dish with garden peas that will be a compliment to any meal.
Ingredients
2 cans very young early peas, drained
1/4 cup onions, chopped
2 boiled eggs, crumbled
2 to 3 tablespoons mayonnaise, to moisten
chopped pimento, optional
Instructions
Drain peas very well. Add onions, crumbled eggs and mayonnaise. Season to taste. Add pimento (if desired.)
