Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1 large egg white
1/2 tsp cinnamon
1/4 tsp salt
1/4 cup slices apple chunks
1 medium ripe banana
12 servings 1 packet splenda
1 cup oatmeal

Instructions

1. Mash ripe banana in a bowl.

2. Add remaining ingredients and stir.

3. Put on baking sheet, in cookie shapes and lightly flatten with a spoon.

4. Bake at 350 °F (175 °C) for 9 minutes.

5. Flip them after the 9 minutes, turn the oven off, and let them get a little crunchier in the still warm oven for 5 minutes.
