Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

4 lb. boneless, skinless chicken thighs
Coarse salt
1 can whole tomatoes
1 medium yellow onion
2 dried ancho chiles
1 large chipotle chile in adobo sauce
1/2 c. sliced almonds
1/4 c. raisins
3 oz. bittersweet chocolate
3 clove garlic
3 tbsp. extra-virgin olive oil
3/4 tsp. ground cumin
1/2 tsp. ground cinnamon
fresh cilantro leaves

Instructions

Season chicken thighs with salt and place in a 5-to-6-quart slow cooker. In a blender, puree tomatoes, onion, ancho and chipotle chiles, almonds, raisins, chocolate, garlic, oil, cumin, and cinnamon until smooth.
