Sesame seeds help with progesterone balance. Lignans found in in sesame seeds help to prevent excess estrogen production. Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity.

Ingredients

1 cup all-purpose flour
1/2 cup toasted pine nuts
1/3 cup powdered sugar
1/3 cup tahini
1/4 cup room temperature unsalted butter
1/2 teaspoon salt
2 tablespoons black sesame seeds
2 tablespoons demerara sugar

Instructions

Preheat oven to 350 °. Pulse 1 cup all-purpose flour, 1/2 cup toasted pine nuts, 1/3 cup powdered sugar, 1/3 cup tahini, 1/4 cup room temperature unsalted butter, and 1/2 teaspoon salt in a food processor until dough forms a ball around blade.
Mix 2 tablespoons black sesame seeds and 2 tablespoons demerara sugar in a small bowl. Form dough into 1" balls and roll in sesame seed mixture. Place on a parchment-lined rimmed baking sheet, spacing 2" apart, and flatten slightly. Bake cookies until lightly golden, 20-25 minutes.
