Lunch: Bacon Cheeseburgers with Sweet Potato Chips

Recipe by Judy Kim Homemade burgers and oven-baked chips blow fast food away any day.

Ingredients

extra-virgin olive oil
4 large sweet potatoes, peeled and sliced
kosher salt
Freshly ground black pepper
8 strips bacon
1 1/3 lb. 80% lean ground beef, formed into 4 patties (1/3 lb. each)
4 slices American cheese
4 sesame hamburger buns
Greenleaf lettuce
4 small tomatoes or 1 large beefsteak tomato, sliced
1 red onion, sliced
Ketchup, for serving

Instructions

Preheat oven 450 degrees F. Drizzle rimmed baking sheet with olive oil, place in oven for 5 minutes. In a mixing bowl toss potatoes with 2 tablespoons olive oil and season with salt and pepper. Arrange potatoes in a even layer on heated baking sheet. Bake 20 to 25 minutes, then season with salt immediately.
Place 2 paper towels on a microwave-safe plate. Spread out bacon in an even layer and cover with 2 more paper towels. Microwave on high for about 3 to 3 1/2 minutes.
In a large cast iron skillet, add 1 tablespoon oil over high heat. Place burgers in pan and cook 2 minutes per side, then add cheese and cover until melty. Transfer to a paper towel–lined plate to rest.
Assemble burger on sesame bun with lettuce, tomato, and onion. Serve with ketchup and a side of sweet potato chips.
