Lunch: Skillet Cherry Tomatoes
Simply sautéed and sprinkled with fresh herbs, these Skillet Cherry Tomatoes are an easy, pleasing side dish.
Ingredients
1 tbsp. olive oil
1 pt. assorted cherry tomatoes
1 pinch salt
Chopped fresh parsley or chives
Instructions
In 10-inch skillet, heat oil on medium-high. Add cherry tomatoes and salt, and cook 2 to 3 minutes or just until tomato skins split, shaking skillet frequently. Sprinkle with parsley or chives.
