Lunch: Salmon with Peach Salsa

Ingredients

4 piece skinless salmon fillet
1/2 tsp. salt
.13 tsp. Black pepper
1 can peaches
1 c. unpeeled seedless cucumber
2 tbsp. fresh cilantro
2 tbsp. fresh lime juice

Instructions

In 9-inch glass pie plate, arrange salmon fillets, rounded sides down, with thinner ends toward center. Sprinkle with 1/4 teaspoon salt and pepper. Cover with vented plastic wrap, and microwave on High 5 minutes or until opaque throughout.
Meanwhile, prepare the salsa. Chop peaches and place in bowl. Stir in cucumber, cilantro, lime juice, and remaining salt. Serve salmon with salsa.
