Dinner: Cheesy Brussels Sprout Casserole

Recipe by Lindsay Funston The one side that will make your guests freak out for seconds.

Ingredients

3 tbsp. butter
2 lb. Brussels sprouts, thinly sliced or shredded
kosher salt
1/2 tsp. cayenne pepper
3/4 c. heavy cream
1/2 c. grated white cheddar
1/2 c. Gruyere

Instructions

Preheat oven to 375 degrees F. In a large oven-safe skillet over medium heat, melt butter. Add Brussels sprouts and season with salt and cayenne. Cook, stirring occassionally, until tender, about 10 minutes.
Remove from heat and drizzle with cream. Top with cheddar and Gruyere and bake until heated through and cheese is bubbly, 12 to 15 minutes. (If your cheese won't brown, heat under the broiler, 1 minute.)
