Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

2 tbsp. I Can't Believe It's Not Butter!® Spread
1 tbsp. firmly packed dark or light brown sugar
1/4 tsp. ground cinnamon
1 large banana
4 slice crusty whole grain bread

Instructions

Combine I Can't Believe It's Not Butter!® Spread, brown sugar, and cinnamon in small bowl. Arrange banana on 2 bread slices; top with remaining bread. Evenly spread outside of sandwiches with Spread mixture.
Cook sandwiches in 12-inch nonstick skillet over medium heat, turning once, 5 minutes or until golden brown. Each serving contains: Vitamin A 10%, Vitamin C 10%, Calcium 6%, Iron 8%.
