Lunch: Jamaican Jerk Chicken

Bring island flavor to the table with this easy Jamaican Jerk Chicken recipe. Serve with fried plantains and the following Tropical Fruit Salsa for a fun weeknight meal.

Ingredients

4 tsp. ground allspice
6 scallions
3 clove garlic
1 tbsp. minced peeled fresh ginger
3 pickled jalapenos
3 tbsp. fresh lime juice
1 tbsp. brown sugar
3/4 tsp. salt
1/4 tsp. Freshly ground black pepper
3 tbsp. olive oil
4 chicken legs

Instructions

Tropical Fruit Salsa: In medium bowl, combine pineapple, mango, red bell pepper, honey, and fresh lime juice. Cover and refrigerate until serving time.
Jerk Chicken: In large bowl, stir together allspice, scallions, garlic, ginger, jalapenos, lime juice, brown sugar, salt, and black pepper. Add oil and stir to make a paste. Rub jerk paste all over chicken. Cover and refrigerate at least 3 hours or up to overnight.
Preheat broiler or prepare grill.
Broil chicken pieces on broiler rack 8 inches from heat 25 minutes, turning several times, or until cooked through. Transfer chicken to heated platter and serve with salsa. Or grill chicken over medium heat 20 to 25 minutes.
