Lunch: Pimiento Cheese and Bacon Crostini

Recipe by Marian Cooper Cairns and Dawn Perry An American classic like Pimiento cheese just makes sense at the Thanksgiving dinner table.

Ingredients

8 oz. grated extra-sharp Cheddar cheese
1/4 c. mayonnaise
1 4-oz. jar diced pimientos (drained)
1 tsp. Dijon mustard
1/8 tsp. cayenne
16 baguette slices, toasted
4 slices bacon, cooked, for serving
Pickled okra, sliced, for serving

Instructions

Stir together Cheddar cheese, mayonnaise, pimientos, Dijon mustard, and cayenne. Top baguette slices with pimiento cheese, broken bacon, and pickled okra.
