Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1 cup milk
1 large egg, beaten
1 tsp cinnamon
1/4 tsp salt
1 tsp oil
2 medium apples
2 tsps baking powder
3 tsps castor sugar (1 tbsp)
1 cup flour

Instructions

1. Combine flour, salt baking powder, cinnamon and sugar.

2. Add milk and beat to smooth consistency – add oil and egg.

3. Peel and grate the apples and stir into batter.

4. Cook pancake in hot frypan, turning when bubbles form.

5. Drizzle with honey or jam and serve.
