Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to.

Ingredients

1/4 c. extra-virgin olive oil
2 tbsp. fresh lemon juice
1 garlic clove
1/2 tsp. finely grated lemon zest
1/4 tsp. ground cumin
Salt and freshly ground pepper
One 19-ounce can chickpeas
1 lb. seedless European or Kirby cucumbers
6 large red radishes
1/2 medium red onion
1/4 c. finely chopped flat-leaf parsley

Instructions

In a large bowl, combine olive oil, lemon juice, garlic, lemon zest, and cumin and season with salt and pepper. Add chickpeas and let marinate at least 25 minutes, stirring occasionally. Just before serving, stir in cucumbers, radishes, onion, and parsley and season with salt and pepper.
Make ahead: Chickpeas can be refrigerated overnight in dressing; add vegetables just before serving.
