Lunch: Jalapeño-Popper Grilled Cheese

Transform your favorite appetizer into an easy and cheesy sandwich.

Ingredients

8 slice bread (preferably a round crusty Italian loaf)
4 tbsp. goat cheese
4 tbsp. apricot preserves
4 tbsp. jalapeño or hot pepper jelly
8 oz. sliced Monterey Jack cheese
8 slice crisp bacon
4 tbsp. unsalted butter

Instructions

On each of 4 slices of bread, spread 1 tablespoon of the goat cheese. Spread preserves over goat cheese, dividing evenly. Add 2 oounces Jack cheese to each, then 2 slices bacon. Top each with another slice of bread.
Spread 1 1/2 teaspoon of the butter on 1 side of each sandwich. Press with a spatula.
Heat a large nonstick skillet over medium-low heat. Place 2 sandwiches, butter side down, in skillet. Cook 3 to 4 minutes, until golden brown. While first side is cooking, spread 1 1/2 teaspoon of the butter on other side of each sandwich. Turn sandwiches and cook 3 to 4 minutes, until second side is crispy and golden brown and cheese has melted. Repeat with remaining 2 sandwiches.
