Lunch: Deep-Fried Masa Turnovers with Crab

Quesadillas Fritas con Jaiba

Ingredients

1 cup chopped seeded plum tomatoes (about 8 ounces)
1 1/2 tablespoons olive oil
3/4 cup chopped white onion
2 garlic cloves, chopped
1/2 cup chopped pitted green olives
2 pickled jalapeño chiles, chopped
1/2 teaspoon dried marjoram
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1 1/2 cups shredded fresh crabmeat
2 tablespoons chopped fresh Italian parsley

Instructions

Puree tomatoes in blender. Heat oil in large skillet over medium-high heat. Add onion and sauté until beginning to brown, about 6 minutes. Add garlic and sauté 30 seconds. Mix in olives, chiles, and dried herbs, then tomato puree. Reduce heat to medium. Simmer until most liquid is absorbed, stirring occasionally, about 5 minutes. Remove from heat. Mix in crab and parsley; season with salt.
