1 tbsp canola oil
1 medium onion
7 1/2 oz white sliced mushrooms
1 1/3 cups peas & carrots
2 cups 99% fat free chicken broth

Instructions

1. Saute chicken in oil until lightly browned.

2. Add mushrooms, onion, peas and carrots, and rice and saute, stirring until rice is lightly browned.

3. Add broth and bring to a full boil.

4. Cover, remove from heat and let stand 5 minutes.
