Lunch: Dip This

Two secret ingredients -- French bread and almonds -- make this dip deliciously creamy, without a drop of dairy. Choose a small, medium, or large clove of garlic, depending on just how much you like garlic.

Ingredients

4 oz. French bread
cold water
1 clove garlic
1 c. slivered almonds
1 tsp. salt
2 tbsp. olive oil
1 tsp. cider vinegar
pinch nutmeg
1/4 c. water (optional)
Raw veggies for dipping

Instructions

Tear the bread into chunks. You should end up with almost 4 cups.
Soak the bread in the cold water in the mixing bowl.
Puree the garlic with the almonds in the blender until you have a fine paste.
Squeeze the water out of the bread, and add the bread to the paste. Add the rest of the ingredients except for the veggies and the optional water, and blend to combine. If you need to, add up to 1 ⁄4 cup water until you get a good consistency: thick, but not too thick. Dip in with the veggies.
