Lunch: Grilled Lamb Chops and Peaches With Arugula Mozzarella Salad

Sweet grilled peaches pair perfectly with rich, meaty lamb chops and a bright arugula salad for a marvelous Mediterranean-inspired meal.

Ingredients

2 lbs lamb rib chops, (thin)
2 peaches, pitted and sliced into thick wedges
6 cups baby arugula
1/4 red onion, sliced
1 cup mini fresh mozzarella balls
1 drizzle olive oil, to taste
balsamic vinegar, to taste
kosher salt, to taste
black pepper, to taste

Instructions

Season lamb chops and peaches with salt and pepper.
Grill lamb 4 minutes on each side (they will be medium rare.) Grill peaches for 4 minutes on each side as well.
Add arugula to a large bowl and toss with red onion and mozzarella. Drizzle with olive oil and vinegar, season with salt and pepper, then toss again.
Divide the salad between 4 plates and top with lamb and peaches.
