Lunch: Tex-Mex Double Beef Burger

Recipe by Marian Cooper Cairns This burger is double the beef and all Tex-Mex.

Ingredients

2 lb. ground chuck
kosher salt
Black pepper
8 slices extra-sharp Cheddar
4 Kaiser buns
Pickled Jalapeños, for serving
Pico de gallo, for serving
Guacamole, for serving

Instructions

Shape ground chuck into 8 patties. Season with salt and pepper.
Grill, covered, over medium-high heat until desired degree of doneness, 2 to 3 minutes per side for medium. Top patties with Cheddar and grill, covered, until melted, 1 to 2 minutes. Stack 2 burgers.
Serve on 4 grilled Kaiser buns with jalapeños, pico de gallo, and guacamole.
