Lunch: Taco Lettuce Cups

Recipe by Lauren Miyashiro Taco Lettuce Cups

Ingredients

1 onion, chopped
2 cloves garlic, chopped
2 tbsp. vegetable oil
kosher salt
Freshly ground pepper
1 tsp. chili powder
1 tsp. cumin
1 lb. ground beef
1/2 c. tomato sauce
1/2 c. chicken stock
1/2 c. shredded Cheddar
Large leafy lettuce (leaves separated), for serving
1 avocado, chopped
Salsa, for serving (optional)
Sour cream, for serving (optional)

Instructions

Heat oil in a large skillet over medium heat. Add onions and sauté until soft, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Then add the ground beef, stirring occasionally, and sauté until cooked through. Stir in the spices, followed by the tomato sauce and chicken stock. Let simmer for about 5-8 minutes to allow liquid to reduce and flavors to meld. Season to taste with salt and pepper. Turn off heat and set aside.
Serve taco meat in lettuce cups. Garnish with cheddar, sour cream, avocado and salsa, as desired.
