Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1 reduced fat homestyle buttermilk biscuit
1 medium apple
1 tsp packed brown sugar
1 pat butter
1 tsp cinnamon

Instructions

1. Take biscuit, and place on a greased cookie sheet.

2. Slice apple thinly, place on top of biscuit (press down a little to flatten the biscuit slightly). You may not need the entire apple to cover the biscuit.

3. Take butter and slice very thinly. Spread out over the apple slices.

4. Sprinkle with brown sugar. Add cinnamon and ginger, as much as desired.

5. Bake at 375 °F (190 °C) for 20 minutes. It takes a little longer than the biscuits normally would, due to the toppings.

6. Note: add an optional scoop of reduced fat vanilla ice cream for an extra special treat.
