Lunch: Watermelon Pork Tacos in Lettuce Shells

Recipe by Guy Fieri Throw a refreshing summer dinner party with these pork "tacos," which are served in lettuce shells and garnished with watermelon-cucumber-avocado salsa.

Ingredients

1 pork tenderlon
1 tbsp. onion powder
1 tsp. red chili flakes
1 tbsp. Black pepper
2 tbsp. chopped fresh gingerroot
1 tbsp. Serrano chili
2 tbsp. fresh garlic
3 tbsp. soy sauce
2 tbsp. oyster sauce
1/2 tsp. sesame oil

Instructions

For pork: Combine all ingredients in a re-sealable plastic bag and marinate for 30 minutes.
For vinaigrette: Combine all ingredients and set aside.
For salsa: Combine watermelon, cucumber, and avocado together and very gently fold with vinaigrette, chill.
For lettuce "shell": Trim off soft dark green end, cut and separate into 4-inch long taco shell-shaped pieces, drain and chill.
To cook: Preheat grill to medium heat, grill pork for 2 minutes on one side, turn, grill 1 more minute, remove from heat, let rest 3 minutes, then rough chop pieces so that they are about 1/2-inch pieces.
For assembly: Fill lettuce shells with pork, top with salsa, devour!
