Lunch: Pulled Pork Sliders with Hawaiian Slaw

Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Pineapples are loaded with vitamins and minerals including vitamin A, vitamin C, calcium, phosphorus, and potassium.

Ingredients

1/2 head Napa cabbage, shredded
1 cup shredded red cabbage
1/2 cup shredded carrots
1/2 cup crushed canned pineapple, drained
1/2 cup macadamia nuts, toasted and chopped
1/2 cup mayonnaise
1/4 cup raisins
1/2 teaspoon crushed black pepper
1/2 teaspoon kosher salt
1/8 teaspoon ground cinnamon

Instructions

For the Hawaiian slaw: Mix together the Napa cabbage, red cabbage, carrots, pineapple, macadamia nuts, mayonnaise, raisins, black pepper, salt and cinnamon in a bowl, and set aside. For the pulled pork sliders: Preheat the oven to 350 degrees F. Mix together the seasoned salt, cumin, oregano, chili powder and black pepper in a small bowl. Season the pork on all sides with the spice mix, cover with 1/2 cup of the King's Hawaiian Smoked Bacon BBQ Sauce and place in a medium roasting pan. Add the broth, bay leaves and peppercorns to the pan with the pork. The broth should cover about half of the pork. Cover the pan with foil and bake until it pulls apart easily, about 3 1/2 hours. Remove the pork from the pan, and shred. Add the remaining 1/2 cup King's Hawaiian Smoked Bacon BBQ Sauce to the shredded pork, toss to combine and set aside. Toast the King's Hawaiian Original Hawaiian Sweet Dinner Rolls, then build your sandwich adding the pork first, then topping with the slaw.
