Side Dish: Spiced Couscous

This recipe was wonderful when served with the Poached Chicken Breasts with Gingered Applesauce.

Ingredients

1/4 cup apple cider
1/2 tsp ground allspice
1/2 tsp black pepper
1/4 tsp table salt
14 1/2 oz chicken broth
1 cup whole wheat couscous
1 tbsp olive oil

Instructions

1. Bring the broth, cider, oil, pepper, allspice and salt to a boil in a medium saucepan over high heat.

2. Stir in the couscous and bring to a boil again.

3. Reduce the heat to low, cover the pan and cook for 2 minutes, or until all the liquid has been absorbed.

4. Remove from the heat. Fluff with a fork. Cover and allow to stand for 5 minutes.
