Lunch: Cherry Clafouti

Take advantage of the end of cherry season with this delicious cherry clafouti.

Ingredients

unsalted butter
1 to 2 c. sweet Bing cherries
3/4 c. all-purpose flour
3/4 c. sugar
1 pinch salt
4 large eggs
2 c. heavy cream
1 vanilla bean
confectioners' sugar
Crème fraîche

Instructions

Preheat oven to 375 degrees F. Brush 2-quart glass or ceramic baking dish or 10-inch skillet with butter. Arrange cherries in prepared baking dish; set aside.
In large bowl, whisk flour, sugar, and salt. Whisk in eggs, one at a time. Slowly whisk in cream, then vanilla seeds. Pour batter over cherries in baking dish.
Sprinkle top with granulated sugar. Bake 50 minutes or until firm. Dust top with confectioners’ sugar. Serve with dollop of crème fraîche.
