Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients
3 medium bananas, mashed
2 eggs
2 tsps baking powder
1 1/4 cups almond meal flour
1/4 tsp baking soda
1/2 cup strawberries, sliced
1/2 tbsp virgin coconut oil
1/4 tsp cinnamon
Instructions
1. Preheat oven to 350 °F (175 °C) and grease loaf pan with coconut oil.
2. Combine all ingredients and pour in loaf pan.
3. Bake for 45 minutes or until toothpick comes out clean.
4. Let bread sit for 10 minutes and remove, cool completely.
5. Note: pecans or another nut may be added to mixture.
