Health and fertility benefits of Scalloped Apples Casserole Recipe

Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. (Reference: http://www.ncbi.nlm.nih.gov/pubmed/11506060). Apples will improve your body's sensitivity to insulin (Reference: http://care.diabetesjournals.org/content/27/1/281.full)

Ingredients

10 cups thinly sliced peeled Golden Delicious apples (about 8)
1 cup sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
6 tablespoons butter, divided
2 cups soft bread crumbs (about 4 slices)

Instructions

In a large bowl, combine the apples, sugar, cinnamon and cloves. Transfer to a greased 13x9-in. baking dish. Dot with 2 tablespoons butter. Bake, uncovered, at 325 ° for 25 minutes or until apples are crisp-tender.
Meanwhile, in a small skillet, melt remaining butter. Add bread crumbs; cook and stir for 3-5 minutes or until crispy and golden brown. Sprinkle over apple mixture.
