Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

cooking spray
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
3/4 cup white sugar
1/3 cup applesauce
1/3 cup skim milk
1 egg
1 teaspoon vanilla extract
2 cups fresh blueberries

Instructions

Preheat oven to 400 degrees F (200 degrees C). Spray 16 muffin cups with cooking spray.
Sift flour, baking powder, and cinnamon together in a bowl. Mix sugar, applesauce, milk, egg, and vanilla extract together in a separate bowl. Stir flour mixture into wet ingredients until just combined. Fold in blueberries. Fill muffin cups 2/3 full with batter.
Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, 20 minutes.
