Lunch: Banana Tart Tatin

Ingredients

1/2 c. sugar
1/2 vanilla bean, seeds scraped
1/4 tsp. kosher salt
3 to 4 large bananas, halved lengthwise
All-purpose flour, for surface
1/2 recipe Basic Pie Dough

Instructions

Preheat oven to 400 degrees F. Cook sugar, vanilla seeds, and salt in a large skillet over medium heat, stirring occasionally, until mixture is amber and a spatula leaves a trail, 4 to 6 minutes. Pour syrup into the bottom of a nonstick 9-inch pie plate; cool slightly. Arrange bananas cut-side down in a snug single layer on top of caramel, cutting to fit if necessary.
On a floured surface, roll 1/2 Basic Pie Dough recipe to an 11-inch circle. Place on top of bananas; tuck edges under and prick all over with the tip of a knife.
Bake 15 minutes. Reduce heat to 350 degrees F and bake until golden brown, 25 to 30 minutes. Invert onto a serving plate.
