Lunch: Bean Salad

A lightly cooked salad that will last in the fridge for weeks.

Ingredients

1 cup onion, chopped
1 bell pepper, chopped
1 can pimento, diced
1 cup celery, chopped
1 (15 oz) can small english peas
1 (15 oz) can french cut green beans
1 cup sugar
1 teaspoon salt
1 teaspoon pepper
3/4 cup vinegar
1/2 cup oil

Instructions

Drain the two cans of green beans, and combine beans, onions, pepper, pimento and celery in small pot. Bring to a boil and set aside to cool.
