Lunch: Ravioli–Green Bean Lasagna

Fast and easy, cheesy lasagna in only 35 minutes. The trick is pre-made fresh or frozen raviolis for a great week night meal.

Ingredients

1/2 lb. thin green beans
3 tbsp. water
1 c. part-skim ricotta cheese
1 c. provolone cheese
1/2 c. Parmesan cheese
1 1/2 c. prepared marinara sauce
2 package large cheese ravioli

Instructions

Preheat oven to 375 degrees F. In large bowl, place thin green beans and water; cover and microwave on High 3 minutes or until tender.
Meanwhile, in medium bowl, mix part-skim ricotta cheese, 1/2 cup shredded provolone cheese, and 1/4 cup grated Parmesan cheese.
Spread, in 2-quart baking dish, 3/4 cup prepared marinara sauce. Top with 1 package cheese ravioli, ricotta mixture, and green beans. Top with another package cheese ravioli and the remaining marinara sauce.
Sprinkle with the remaining provolone cheese and grated Parmesan cheese; bake 25 minutes or until bubbling and golden brown.
