Lunch: Paula's Laula Luau Coconut Pie

A quick and easy dessert to assemble, and just as easy to eat!

Ingredients

4 tablespoons butter, melted
2 eggs, beaten
1 tablespoon all-purpose flour
3/4 cup sugar
1 (3 1/2 oz) can shredded sweetened coconut, (1 cup)
1 cup coconut milk
1 (9 inch) unbaked pie shell

Instructions

Preheat oven to 350 °F. In a large bowl, combine melted butter, eggs, flour, sugar, coconut and milk. Pour into pie shell. Bake until firm, about 45 to 60 minutes.
