Lunch: Sweet Pepper Sauce

This sauce pairs perfectly with a robustly flavored beef tenderloin.

Ingredients

1 1/2 c. roasted red peppers
2 tbsp. tomato paste
1/3 c. blanched almonds
1/2 c. canola or vegetable oil
2 tbsp. sherry vinegar
1 clove garlic
1/2 tsp. salt

Instructions

In food processor, pulse roasted red peppers, tomato paste, blanched sliced almonds, oil, sherry vinegar, garlic, and salt until smooth.
