Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1/2 cup pitted dried Medjool dates, stems removed
1 1/2 cups whole raw almonds
1/4 cup almond butter
2 tablespoons maple syrup
1/4 teaspoon almond extract
1/4 teaspoon cinnamon
1 cup dried cherries
1/2 cup rolled oats

Instructions

Line a baking sheet with parchment. Blend first 6 ingredients (through cinnamon) in a food processor until smooth. If necessary, add water 1 tsp. at a time until mixture holds together. Pulse in cherries and oats.
Roll tablespoonfuls of dough into balls; place on baking sheet. Flatten slightly. Cover with plastic wrap; refrigerate until firm, about 1 hour. Store between sheets of waxed paper or parchment in an airtight container in the refrigerator for up to 1 week.
